Named after the traditional “buso” used to twist the dough, busiate are an emblem of Sicilian home cooking: simple ingredients, bold character and a texture designed for flavour capture.
Shape, texture and sauce cling
The elongated corkscrew profile creates porosity and excellent sauce adhesion, while keeping a satisfying bite after cooking. Busiate complement both seafood and vegetable sauces, as well as hearty meat ragù.
