Sicilian Salad: an explosion of flavours and colours

Summer is just around the corner and with it the desire for freshness and Mediterranean flavours. For this reason, today we propose a simple but delicious recipe: Sicilian salad! β˜€οΈ

This salad is a triumph of colours and flavours, thanks to the use of typical Sicilian vegetables such as tomatoes, aubergines, cucumbers and courgettes. All dressed with high-quality extra virgin olive oil and a pinch of oregano for an even more intense flavour.


  • 200g cherry tomatoes
  • 1 aubergine
  • 1 cucumber
  • 1 courgette
  • 100g round tomatoes
  • 50g black olives πŸ«’
  • Extra virgin olive oil πŸ«’
  • Oregano
  • Salt and pepper


  • Wash all the vegetables thoroughly.
  • Cut the cherry tomatoes in half, the aubergine into cubes, the cucumber into thin slices and the courgette into rounds.
  • Combine all the vegetables in a large bowl.
  • Add the black olives, extra virgin olive oil, oregano, salt and pepper. πŸ«’
  • Stir gently to mix all the ingredients well.
  • Leave to rest in the fridge for at least 30 minutes before serving. ❄️


  • For an even more delicious taste, you can also add capers or feta cheese cubes to the salad.
  • If you prefer a stronger flavour, you can use balsamic vinegar from Modena instead of lemon.
