Sicilian lemon mousse: the fresh recipe for summer

Sicilian lemon mousse is the perfect dessert to finish summer meals in a light and fresh way, thanks to its delicate flavor.

The Sicilian lemon mousse, in fact, is a very frothy dessert that will satisfy the palates of all diners: it will be impossible to resist it.

Here are the ingredients for 4 servings:

Mammarancia BIO lemon juice: 60 ml;

Sugar: 250 gr;

Fresh whipping cream: 400 ml;

Egg whites: 150 gr (about 4 eggs);

Gelatin in sheets: 10 gr.

Here is the procedure of the Sicilian lemon mousse:

First, you need to focus on the preparation of the Italian meringue, pouring the Mammarancia BIO lemon juice together with 150 grams of sugar into a pot. Put everything on low heat and mix until the sugar is completely dissolved.

ATTENTION: in this phase, it will be necessary to have a kitchen thermometer, because the mixture must not exceed 121 ยฐ C.

When the syrup reaches 116 ยฐ, you can start working the egg whites with the help of an electric whisk (set at moderate speed), until they become white. Meanwhile, add the remaining part of the sugar, previously set aside. When the syrup in the pot has reached 121 ยฐ and the egg whites have reached the right consistency, it will be necessary to pour the liquid on the egg whites a little at a time, always continuing to use the electric whisk at medium speed. Continue like this until the mixture is cold: and the Italian meringue is ready, white and foamy.

After that, you will need to soak the gelatin in cold water for about 10 minutes. After this time, heat 50 ml of cream in a saucepan, add the well-squeezed gelatin, and stir until it is completely dissolved. Turn off the heat and allow it to cool. In the meantime, whip the remaining cream, then add it to the meringue, with a movement that goes from top to bottom, so as not to risk taking it apart. Finally, add the cream in which the gelatine has been dissolved, mix well and refrigerate for about 2 hours.

After resting for 2 hours in the refrigerator, take the Sicilian lemon mousse, place it in a pastry bag and fill the containers you have chosen. Decorate as desired, perhaps using lemon peel or biscuits.
