Orange salad: the traditional Sicilian recipe

When we speak about oranges, the first recipes that come to mind have to do with sweets, but if you are not a great cook, you will enjoy just orange juice! Today, however, we will offer you a savoury recipe simple to prepare (although the adjective “savoury” is extremely reductive to represent properly the flavour of the dish): the orange salad. It’s an explosion of taste that Sicilians know well and serve it as appetizer or side dish. Take 4 Mammarancia oranges and get ready to prepare this delicious and healthy PGI red orange salad from Sicily, certified organic!

Ingredients (serves 4):

  • 4 Sicilian blood oranges
  • 1 spring onion
  • parsley
  • 100g black olives
  • 4 tablespoons extra virgin olive oil
  • salt to taste
  • black pepper to taste

Preparation:

  • Peel the oranges and cut them into slices
  • Arrange them on a dish in a single layer
  • Prepare the sauce: clean and finely slice the spring onion and transfer it into a bowl
  • Chop the parsley and put it into the bowl with the spring onion and add extra virgin olive oil
  • Add olives and more olive oil (if needed)
  • Evenly spread the mixture made up of onions and olives on the orange slices
  • Leave to gain flavour at room temperature for about ten minutes
  • Move the orange slices to the serving platter, pour the sauce and add more extra virgin olive oil (if needed)
  • Add salt and pepper to taste and serve.
