Cedar and fennel: a combination that smells of Sicily

🛒 Ingredients (for 2 people)

– 1 fresh organic citron
– 1 large fennel
– 50 g black olives (preferably baked or pickled)
Extra virgin olive oil to taste.
Salt and black pepper to taste
– Chopped fresh parsley
(Optional): a few fresh mint leaves for an aromatic touch


👩‍🍳 Step by step preparation

  1. Wash and peel the citron, removing the outermost peel if very thick.
    Cut the pulp into thin slices and remove any seeds.
  2. Clean the fennel and slice it finely with a mandoline or a sharp knife,
    so that you get thin, crispy slices.
  3. Assemble the salad in a large bowl: combine citron and fennel, add black olives, chopped parsley, and (if you like) a few mint leaves.
  4. Season with extra virgin olive oil, salt and pepper to taste. Stir gently.
  5. Serve immediately, or let stand in the refrigerator 15-20 minutes to let the flavors meld.
