3. Prep the vegetables

  • Slice the cooked beetroot
  • Cut the yellow bell pepper into thin strips
  • Dice the tomato
  • Cut the avocado just before serving, in slices or cubes

4. Season and mix

In a large bowl, combine borlotti, snow peas, beetroot, tomato, and bell pepper.
